Laurent Bunel manages the Carlton's restaurants, banquet services and room service masterfully. He began working in 1985 at the Casiono in Deauville and has continued gaining experience at such renowned establishments as Le Chabichou in Courchevel, L'Hôtel du Golf and Le Royal in Deauville, alongside Bernard Loiseau, and in Mauritius at the famous Saint Géran. Since 2001, he has officiated at the InterContinental Carlton Cannes, an early proponent of authentic cuisine, insipred by seasonal market produce and the best of tradition - that food should bring pleasure.
From childhood, Sylvain Micholet has had a passion for the arts of the table and service. After experience in luxury hospitality gained at a series of prestigious establishments such as “The Vineyard at Stockcross” in England, “La Résidence de la Pinède” , “La Briqueterie” , “l'Oustau de Baumanière” and “Le Mas de Pierre” , he now works as F&B Assistant Director of the Carlton Restaurant. “A huge desire to learn and to travel took me to Switzerland, England, and the North and then the South of France. After those years of experience in Europe, I Settled on the Côte d'Azur, where I enjoy an incomparable quality of life and vital balance every day.”
Côte d’Azur nightlife holds no secrets for Franck Gamba. For 25 years, the native of Nice has presided over the most beautiful bars on the Riviera. When he was younger, the head bartender dreamed of being a fireman, but destiny had other plans. He was educated in the barman’s craft “on-the-job”, learning recipes for classic cocktails by heart and noting them in his treasured notepad. The young man moved up the ranks and participated in several bar keeping competitions worldwide, where he collected many trophies. In 2010, he took the helm of the bar at the InterContinental Carlton Cannes. The chief bartender is always on the lookout for new things, but there is no question of leaving out the classics.“My credo is know-how to follow trends, while trying to create different things”.
The chief Sommelier of the Carlton has kept watch over hundreds of bottles since 1998. The man who says he discovered his vocation “by chance” feels he is very fortunate : “Wine to me is a way of travelling. And that's what I try to communicate to my customers.” Purely self-taught, he has forged solid knowledge of vintage and vineyard - those of the region, of course, but also of the entire world - through reading, training and pleasure travel.
